Spinach Tortillas
Ingredients
6 eggs
8 oz of cream cheese (full fat)
6 tablespoons of almond flour
2 cups of spinach (packed)
½ teaspoon of pink salt
¼ teaspoon of ground black pepper
2 tablespoons of avocado oil (or butter or coconut oil)
Instructions
In a blender, blend all the ingredients until liquid.
In a frying pan, use avocado or coconut oil (or butter) to prevent it from sticking to the pan.
Fill the bottom of the pan with the mix of tortilla until cooked, then flip it over to cook on the other side. Add pink salt to each side as it cooks.
